one of my first projects at home is to repaint the kithchen cabinets and since this is my first time doing it, I wanted to ask you about the steps. How to remove the old color and what kind of paint to use?

Okay, I got you the simple steps: ofc you need to remove the doors and hardware. After that, clean and sand the surfaces, apply primer, and paint with 2-3 coats (make sure each coat is dry before applying the next). after all is done, you can reinstall the hardware.

If you have the luxury of time, you can proceed with @BootScoot45's method about sanding. But if not really, would you consider painting over the old paint? If yes, then you just need a degreaser and light sand. This allows you to actually do repairs then just proceed as normal with the primer and paint.

I would go with @BootScoot45's idea with cleaning, sanding and priming. That guarantees long-term and better quality!! For the paint itself, I suggest a good quality enamel paint. Get the one specific for cabinets so it will give you the most durable and washable finish.
